We serve nourishing Japanese set meals centered around miso soup made with seasonal ingredients from Ishikawa and the Hokuriku region. Most dishes are gluten-free and free of chemical seasonings. While the miso soup uses fish-based dashi, vegetarian options without meat are available. We use organic Koshihikari rice from Ishikawa. Organic matcha and traditional Japanese sweets (jo-namagashi) are also offered—advance reservation recommended.
